STUFFED SHELLS

1 Box Jumbo Shells – cooked to al dente
1 Recipe/Jar spaghetti sauce

Filling:

1 package Tofu – drained
1 (10oz) package frozen spinach
—thawed and drained.
3 cloves garlic – minced
1 large onion – chopped
1teaspoon oregano
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon yeast flakes
½ teaspoon salt

Sauté onions and garlic in oil.
Mash tofu. Add spinach, onion/garlic mixture and rest of filling ingredients.
Mix well.
Fill each cooked shell with filing.
Preheat oven to 350 Fahrenheit
Pour a thin layer of sauce on the bottom of a 9×13 pan.
Line up filled shells in pan and cover with rest of sauce – cover.
Bake 30 minutes.
