Thousand Island dressing
- 1 (12.3 oz) package Mori-Nu Tofu, silken/soft, drained
- 4 Tbsp. fresh lemon juice
- 4 Tbsp. catsup
- 1 Tbsp. canola oil, optional
- 2 Tbsp. green onion, chopped
- 4 Tbsp. sweet pickle relish in lemon juice
- 2 Tbsp. onions, chopped
- 1/8 tsp. sea salt
In a food processor or blender, combine tofu, lemon juice and catsup. Blend until smooth. If using the oil pour slowly into the mixture while blending. Pour mixture into a bowl and stir in remaining ingredients. Chill minimum of 1 hour. Serve over salads or on your favorite sandwich. Makes 1 ½ cups.
