VEGETARIAN BURGERS

1 cup garbanzo beans
3 cups water
1 medium onion, chopped
3 tablespoon soy milk powder
1 cup pecan meal
2 cups oats, (1 cup quick and 1 cup rolled oats)
2 tablespoons nutritional yeast
2 tablespoons sage
2 teaspoon garlic powder
½ teaspoon salt, optional
several tablespoons low-sodium soy sauce
¼ cup canola oil

Cover garbanzo beans with water soak overnight, then drain water (yields 2 ½ cups). In a blender place beans and water and blend until smooth. In a large bowl add remaining ingredients one by one except oil, and mix well. Heat 3 tablespoons of oil in a large skillet. Fill mixture in a ¼ measuring cup and place in hot oil. Flatten to make patties. Using medium heat brown for 5 – 8 minutes on each side covered. Makes 32 medium patties.

Note: To bake patties place on greased cookie sheet and bake at 350 degrees for 30 minutes. Serve on whole-wheat bun with lettuce, tomato, and your favorite dressing. Try my thousand island dressing (page 40). In addition, this recipe can make small sausages that go well with my tofu scramblers or waffle recipe.
